• 🌱 3 marinated tofus ready for the air fryer or skillet:
Greek style: tomato paste, garlic, lemon juice, olive oil, oregano, herbes de Provence, soy sauce.
“Chicken” style: toasted sesame oil, nutritional yeast, balsamic vinegar, maple syrup, soy sauce.

• 💚 Creamy gnocchi with garden zucchini – two large zucchinis pan-cooked until soft, gnocchi, soy cream, salt, and pepper.
• 🥕 Roasted vegetables – carrots, sweet potatoes, onion, and baby potatoes on a sheet pan with olive oil, salt, pepper, and Cajun spices.
• 🥫 Tempeh lasagna – tempeh bolognese, béchamel, lasagna sheets, and vegan shredded cheese.
• 🍌 Banana walnut muffins – my kamut flour muffin recipe with chopped banana and walnuts!

This makes me so happy! My husband and I didn’t cook for ourselves (not even a pot of Annie’s lol) for the first 13 weeks post partum because of our amazing village. I never even thought of doing this for friends who had babies before we did, but now that I know I will be stocking the freezers of every friend who is expecting from here on out! May these types of friendships find us all ✨💚
The supper meals were AMAZING but the one-hand snacks were a complete lifesaver for me while breastfeeding. I was starving all the time and awake all night nursing, muffins and granola bars and any other snacks that can be eaten with one hand were so helpful!
