Years ago, I entered an amateur sushi competition where we were given less than an hour to create a plate of sushi for several judges to see, taste, and grade. While everyone else presented mundane plates of sushi that they learned how to make in our sushi-making classes (round, square, triangle maki shapes), I went the extra step and studied some of the sushi designs that the masters made. The one on the upper left is "stained glass sushi" designed by Morimoto. Mine is not as precise as his but I feel it was a great first attempt at it. I also came up with the idea of roses inside hearts in the maki on the upper right. Finally, I came up with the concept of "sushi fruit," where each roe-covered color ball represented (roughly) what was stuffed inside it: red for tuna, orange for salmon, and black for avocade (we weren't provided any green roe so I chose to stuff the black one with avocado). I won that competition against several professional chefs, some of whom went on to become full-fledged sushi chefs. Hope everyone likes my plate! 🙂

This wasn’t the official plating I assume, right?

If this plate won, I’d hate to see the rest. The sushi looks good. But the plastic cutting board…

  3. How is the presentation of “just randomly throw sushi at a board and see what sticks” winning awards?

woah, the stained glass style is cool! I can’t even begin to imagine how that nori look inside is achieved. Really neat (nice) pieces 🙂

    Congrats! These look great!

I’m going to look up the stained glass technique for my next date night! I’ll pull out the hearts for a special occasion 😉

Also dear lord some people are in need of a hug this morning.

I swear this sub is full of some of the snobbiest, most miserable people on Reddit. You did a great job!

Love the stained glass! Came out very pretty

  9. Guess most replies missed the amateur and under an hour details. Looks great and it’s something different.

Clearly the plating wasn’t taken into account during judging but that stained glass roll is beautiful. I love what you did here.

  12. I actually see both of these at the supermarkets during the grand openings or special holiday events. The square one is often referred to as mosaic sushi and the heart ones are used during their valentines platters.

Is that your background? Well executed, but it’s not like a “new idea” or something. Tbh the mosaic sushi is made exactly how I seen it with cucumber too so I assume that’s where the idea came from.

Funnily enough, I used to work for morimoto and learned how to do his “stained glass” roll, it’s actually pretty easy.
