I used to drown my salads in oil. But now, thanks to the Forks Over Knives cooking course, I’ve learned that oil is just concentrated calories with little to no nutritional value, and that I don’t need it to make food taste amazing. This vegan, creamy Italian dressing has become one of my go-tos since taking the course. It comes together in minutes, uses simple ingredients, and I can make a batch to keep in the fridge all week. It’s quick, nourishing, and has seriously leveled up my salads.

  1. Oils do have nutritional values also medical as well. It depends on the type & quality of the oil & for a vegan, OIL is essential for better health. SInce I cannothave chickpeas, an avocado makes the best creamy salad dressing because it is neutral tasting & creamy not gritty or sand like in texture. PLUS Avocado are far denser in vitamins then chick peas. Sprouted raw lentils are amazingly spicy & enhance any salad.

  2. This is great if you're trying to lose weight with a calorie deficit, but it's not good for the long term. You know fats are essential for absorbing vitamins A, D, E, and K. And your body needs fatty acids, like your omega 3, 6, and 9, DEA and DHA. Just choose better oils and use a bit less if you're trying to lose weight. Too little and you'll develop malnutrition.
