Scored the underbelly, cooked on 240 for about 3 hours, brought up to 350 until 140 internal then seered it. Set for 2 hours wrapped in foil…Poured the tallow on it while cutting. 😍

    That’s not how I do tri tip, but this is a pellet group so makes sense. I do it on a Santa Maria over oak splits. Did a picanha last week and I like tri tip better that way. I do like picanha in my pellet, but I slice it thick cuts and then sear them quick after smoking.

  2. I wouldn’t ever cook a tritip that way but looks good.
