You’ll notice that both pans have a tinfoil divider. The astute viewer might also see the pan on the left hand side has 2 corners folded up (the corners toward the rear of the smoker, for the less astute), and the pan on the right has a single corner lifted up.
The pan with both corners lifted up has burnt ends that have been coated in hot honey.
The pan with the single lifted corner was not coated in hot honey.
The sections of the pans that don’t don’t have any lifted corners were marinated in beer, the other sections were not.
All of the burnt ends were coated in sweet baby ray’s bbq sauce.
In my option, the ones that only had bbq sauce and were not coated in hot honey were my favorite.
I found that the hot honey seemed to lose its spice, but the burnt ends were more mild.
I thought the beer came through more than I’d have preferred on the beer marinated burnt ends.
