Any chance of cooking temperatures and timings? I know you said 3 hours slow cook initially but no temperature and then with the lid off you had no temperature or timing? Usually itโs in the description but isnโt!
3 hours is way too long. Cooked mine low at 120 for 3 hours and all the pork had totally disintegrated. Was still tasty, but would have preferred it to stay in slices.

You should try Chinese black vinegar, it will mesh with the flavours better. Add shaoxing wine as well
