Was out of fish sauce so used oyster sauce, a lil rice vinegar, a lil soy sauce, and a lil ponzu instead. Not sure the ratio, kinda just made it by taste. Also added cilantro which I love in it.
Next time when I have enough chiles I’ll 100% make quadruple the amount minimum as this is now gone after a 5-person dinner earlier.
