New to grilling/smoking and got my first batch of wings done last night. Got the kettle up to 415-425 and let her roll for 35 minutes. I checked on them at 15 minutes thinking I needed to flip them or rotate them, but they were perfectly fine.
Got whole wings and did an overnight dry brine in the fridge with salt. Separated them and got them coated in black pepper, granulated garlic and some curry powder. Used a couple small pecan and apple wood pieces to get the smoke going. The texture on them was perfect! Crispy on the outside and juicy when you took a bite.
