Envisioned this a while ago, and the weather in my area changed to being a little colder and finally I was able to satisfy this craving!! Like a warm umami driven hug ❤️
It has beef (just salt, pepper and sesame oil) shiitake mushrooms, shallots, preserved egg, ginger and green onions!
I think next time, imma use bone broth from a Korean market I know close to me + the same toppings. I used regular beef broth for this one and while yes it adds a deep flavour with my toppings it got a little too muddled. I still want that beef flavour but on a lighter creamier side-if that makes sense?
AND I wish I can find saltier preserved eggs, if you guys have any suggestions on that it would be much appreciated!

Omg this looks and sounds delicious. Also I’d recommend trying salty duck eggs I’ve used them before in congee and I think their saltiness works really well to balance the blander rice flavor.
Congee hits different in colder weather.
