Grilled Scup/Porgy
Ingredients
* 2 whole scup/porgies(These weighed a little over 2 pounds each)
* 3 lemons sliced
* 1 bunch fresh oregano
* 1 shallot rough chopped
* Salt & Pepper to taste(I used Lemon Pepper for this recipe)
* 1 tablespoon olive oil
Directions
* I caught these myself so i had to remove all the fins and scales
* Then gut the fish thoroughly clean the inside cavity
* Stuff the inside cavity with lemon slices, shallot, and fresh oregano
* With a sharp knife score both sides of the fish in a criss cross pattern
* Coat each side of the porgy with olive oil
* Season both sides with salt & pepper
* Place the porgy in a grilling basket. If you don't have a grilling basket make sure you coat your grill grates with cooking oil every time you flip the fish
* Heat up your grill on medium heat today we are going to use the 2 zone cooking method
* Place your porgy on the grill and let them cook for about 2 minutes per side
* Once you develop a nice even crust along the fish move to the cool side of the grill
* Once you hit an internal temperature of 145 degrees remove the porgies from the grill
* Place the fish on a tray and hit them with some fresh lemon juice
* Garnish with fresh chopped parsley & enjoy!
