So, I bake as a hobby and have always wanted to make a wedding cake. When it came time for my wedding, I just had to do it even though everyone told me I was crazy to make my own cake. Well, it all went according to plan! I am so pleased with the look of it and it tasted amazing. I just got the pictures back from the photographer of me stacking and decorating it in my dress. I somehow did not get frosting on my dress! I was afraid to do the final decoration and stacking untill I put it on the cake table. So, I waited till everyone was eating dinner and snuck off to decorate the cake and dessert table.
I made the sugar flowers and mushrooms in the weeks leading up to the wedding. I baked and froze the cake about 2 weeks before the wedding. I based the flavors on my two favorite recipes my mom makes. The chocolate one was based on her Kahlúa triffle (filled with chocolate pudding and caramel with Kahlúa buttercream) and the vanilla one was inspired by her tuxedo torte (with rasperry puree and white chocolate cream cheese filling with vanilla buttercream). The cookies were rose petal shortbread and lemon shortbread. I really had the best time with this project! Stacking it was slightly nerve wracking! I have never done a tiered cake before, but it didn't collapse and I didn't drop it while stacking it! My neices and nephews were gathered around while I was putting the flowers on and I was feeding them petals. It was a really magical day, and the baking gods smiled upon me.
