We eat these at fancy dinners with family “antipasti” and the mozzarella balls are usually sitting in the pickle juice its so delicious coming from a non-pickle lover too

That’s probably fire tbh. The outside would be pickle flavored and inside will still taste like straight mozzarella to even if it out. That tangy vinegar combo is compatible with a lot of stuff.

In general you can use pickle juice to pickle things even a few times if you take care of proper cleaniness.
There is a guy on YT who is experimenting with this kind of ideas.
It is also possible to use it to get more sour tase of soups.
There is also a “diet” suggesting about 1 shot of pickle juice daily for electrolites.
I’m for some time at level of reusing of many “juices” to “enhance” other meals.
[edit] There is a soup here using dilled cucumbers with juice, I’ve experimented not so long ago using fresh cucumbers and pickles juice. the result was slightly different but pretty cool.
[edit2] btw. I’m pretty sure I’ve seen pickled cheese in a shop years ago. not sure the kind of cheese thought. <- it had some additional spices used.
