Hey try to not get the skin to burnt, take the skin and deep fry it in a fry daddy, it’s amazing!

Spatchcock chicken is a great, quick lunch. I Luke a bit of salt, let it sit in the fridge a couple hours, then your favorite rub and cook at 350. A tasty t bird with crisp skin.

I gotta remember to try a butterflied chicken next time I do a whole chicken.

What temp do you cook to? I done this the other day to 74c and it was nice but I don’t get the falling of the bone like I do when I get one cooked from Costco
