BORGO, a new neighbourhood Italian restaurant set in the beautifully restored Old Bank Building in Phibsborough, will open next week with a menu that’s a “love letter to Italy”.

BORGO is inspired by the deep culinary traditions of Italy, brought to life by restaurateurs Sean Crescenzi and Jamie McCarthy, whose travels across the country shaped their love for regional Italian cooking. Think handmade pasta, wood-fired grilling, and sourdough breads and pizzette, all made in-house.

Sean, originally from Rome, and Jamie, a longtime devotee of Italian food and culture, are no strangers to Dublin’s dining scene. Together, they’ve opened award-winning spots like Crudo in Sandymount, Hera on Dorset St and Achara on the Quays.

Food inspiration ranges from Bologna’s rich pasta dishes and Parma’s legendary cured meats and cheeses, to Venice’s laid-back lagoon fare, Milan’s classic dining culture, and Abruzzo’ s farm-to-table ethos

Expect Bronze die-cut homemade pasta, exclusive Italian imports of meats, cheeses, and wines, 48-hour fermented sourdough breads and pizzette, plus fish and meats grilled over live wood fire.

It’s all about blending traditional techniques with top-quality Irish ingredients; the team are working with some of Ireland’s best local suppliers, including McLoughlin’s
Butchers, Abercorn Farm, John Patton’s Organic Eggs, Rockfield Farm, and Mark the Mushroom Butcher, among others.
