As previously announced, the hotel will be home to Tobi Masa, the latest London opening from chef Masayoshi ‘Masa’ Takayama, one of the most influential figures in modern Japanese cuisine; as well as the first London location for high-profile New York restaurant Carbone.

Joining them will be southern Mediterranean restaurant Serra; tearoom and ‘dessert salon’ Jacqueline; rooftop destination the Eagle Bar; and café and delicatessen concept GSQ.

Conspicuous by its absence from the press announcement is a mention of Richard Caring’s Le Caprice, which had been expected to takeover a prime site on the southeast corner of The Chancery Rosewood.

Rumours have circulated for some time that those plans are no longer going ahead, but no official statement has been made either way.

Restaurant has contacted The Chancery Rosewood for further clarification.

Serra will be inspired by the cuisines of Italy and Greece and be led by chef Alex Povall, who previously cooked under Angela Hartnett at Hartnett Holder & Co and her Michelin-starred Murano restaurant.

The restaurant’s concept is described as blending ‘bold, ingredient-led cuisine with relaxed elegance and genuine hospitality’ and will be open daily for breakfast, lunch and dinner.

Jacqueline will be overseen by executive pastry chef Marius Dufay are serve a ‘signature Flower Collection’ with pastries inspired by single blooms and created using perfumery techniques.

Eagle Bar will be set high above Grosvenor Square with panoramic views across London and feature a music programme curated by an as-yet-unnamed vinyl-first East London collective.

Led by director of bars Liana Oster, the menu will feature an extensive cocktail list alongside a selection of ‘elevated’ bar snacks.

Serra, Jacqueline, Eagle Bar and GSQ will all open on 1 September, with Tobi Masa following on 16 September.
