Welcome back to another episode of my chopped chicken salad series. Today we’re making a green goddess chicken salad packed with tons of veggies. I always start by cooking up my chicken. I like to pan fry on the stove and give it a rough chop, but you can use rotisserie chicken or shredded chicken, whatever you like. This one involves quite a bit of chopping because we’re going to be adding a bunch of green veggies. I’m adding celery, cucumbers, green onion, thinly sliced Brussels sprouts, and some sugar snap peas. These veggies hold up pretty well with the sauce and they add a nice crunch. For the dressing, I’m going to be making a Greek yogurt based green goddess dressing. I add some Greek yogurt, a little bit of mayo, and tons of fresh herbs. I really don’t think you can go wrong here, but I added basil, mint, chives, parsley, cilantro, and dill. Finish it off with a little bit of lemon juice, salt, and pepper, and then blend until smooth. To a big bowl, I add all of my toppings and finish it off with our homemade dressing. I like to meal prep this, but you can also keep the dressing separate and add to each individual serving. Hope you enjoy and let me know if you have any other chopped chicken salad requests.
