🥗 Mediterranean Orzo Salad

Ingredients:

  • 1 ½ cups dry orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 cup marinated artichoke hearts, quartered
  • ¾ cup Kalamata olives, halved
  • ½ cup roasted red peppers (optional)
  • ½ cup feta cheese, crumbled
  • ¼ cup sun-dried tomatoes (optional)
  • 2 tbsp parsley, chopped
  • 1 tbsp dill, chopped (optional)

Dressing:

  • ¼ cup olive oil
  • 3 tbsp red wine vinegar or lemon juice
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • ½ tsp Dijon mustard
  • Salt & pepper

Instructions:

  • Cook orzo in salted water until al dente, drain, rinse, and toss with a little olive oil.
  • Prep veggies & herbs while pasta cooks.
  • Whisk dressing ingredients until smooth.
  • Toss cooled orzo with veggies, herbs, and dressing.
  • Fold in feta, chill 30 mins, and serve.
