Finding protein-rich foods is critical for families who have a hard time keeping their kids’ stomachs satisfied. (Does anyone else’s kids complain they are “starving” 10 minutes after dinner, or just mine?!) Ree Drummond goes through the same struggle, and she recently shared how much she “really appreciate[s] dishes that are higher in protein than usual.” Because protein is good for you and will keep you full longer! She revealed her protein-rich dinner, and we love how nostalgic this recipe makes us feel.
The Pioneer Woman’s Beef and Bean Stuffed Peppers recipe will have your mouth watering. This “amazing” and “easy to make” recipe was inspired by her mom’s stuffed bell peppers that Drummond had as a kid, according to a video shared on Food Network’s YouTube Channel.

Start by browning ground beef in a frying pan and chopping it really small. Remove from the pan, then add chopped onions and bell peppers (but just the tops!) to the pan. Sauté these with a few extra ingredients, including store-bought pesto. “I think if you add pesto to anything, it makes it more delicious automatically!” Drummond gushes. (I can’t help but agree!) This part of the recipe will be the filling for her version of the stuffed bell peppers.
From there, Drummond adds the brown ground beef from earlier back to the mixture along with a drained can of canolini beans “to help with the protein.”
“When my mom used to make stuffed bell peppers, she would stir in a pretty generous amount of rice,” Drummond explained, adding that she uses the beans to replace rice or pasta to up the protein level.
The last ingredient is feta cheese, which adds “incredible flavor” to the dish. (And, again, more protein!). Now, you’re ready to scoop the mixture into the remaining bell pepper shells. From there, she adds the stuffed peppers to a baking pan, adds a couple more ingredients, and bakes them.
Serve with tatsiki and fresh dill on top or you could even prepare a side salad or side of pasta to go along with it.
