If you’re after a one pot dish that’s perfect for meal prep and basically cooks itself, then this recipe is for you. It’s loaded with bold Mexicaninspired flavors and colorful veg. I like to make a big batch at the start of the week so I’ve got something ready for lunch, a training, or a quick dinner when I get home late. I usually serve with rice for some extra carbs and top it with avocado.
