The chicken wings and the fried rice are how I judge Chinese restaurants. If those are both on point, then that place becomes the “good Chinese joint”.

Recipe for this type of wing (Jar-Doo) in the air fryer. I’ve made it and it’s pretty damned close. The secret is the marinade which includes Shaoxing wine, and really brings the umami.
One thing I miss about DC having moved from there a while back, they really leaned into this more than any other place I know. Mumbo sauce is the truth
