Forgot about my dough on the counter for 6 hours

  1. Yesterday I learned just how forgiving sourdough is. I mixed all my ingredients together… and then promptly forgot about my dough on the counter for 6 hours (zero stretch and folds!). 😅

    Once I realized, I figured there was no chance it would turn out. However, I had already used the ingredients so I decided to bake it anyway as an experiment. I was shocked at how well it turned out considering the circumstances!!

    *Ingredients*: 175g starter, 360g water, 9g salt, 550g all purpose flour

    *Method*: Mix all ingredients together, forget about it on the counter for 6 hours, put dough in loaf pan, score dough, bake at 450 for approx 20 min, reduce heat to 400 and remove once internal temp reaches 205-210*F.

    Looks great. I’ve screwed up sourdough at every step. Two fridge days became three. Put dough into the fridge without shaping, and shaped the next day. Used started too early, and way under fermented. Even the worst loaf was decent as bread.

    Just think of bakers pre technology. They made bread with no fridges and very minimal ovens. Bread is very forgiving.

    That looks great! If it makes you feel better, I screwed mine up the other day but it also turned out well.
