Italian wedding soup is one of my favorite things to eat. And this is such a great and easy recipe for it. First, you’re going to sauté some seasoned carrots, celery, and onion and a little bit of butter. Toss in some chopped garlic and add some white wine and a bunch of chicken broth. Season it. And I like to wrap up my rosemary and thyme to make it easier to fish out later. Add in some pasta. And as soon as that’s done cooking, you’re going to add in some freshly chopped spinach. And earlier, I made some mini meatballs that were about the size of a big marble. Add them in there. Adios this thing. And you’re done. I like to garnish it with parm, but you can add some right into the soup, too, if you want. This is next to impossible not to like. It is so good. Try it.
