I work as a culinary manager/chef at a nursing home. I was tasked to make mini charcuterie boards for our tour guests and new residents; I was given 15 minutes notice today lol. Considering my PRD is literally ass, I think I threw something nice together.

Again, this is beautiful but as a practical charcuterie, you’re either making 100 of these for service or only a few. Both are sad.
If it was scaled up to an 8-10 person board, this shit would be a gold mine. Very very skilled work for sure, just the practical restaurant/catering feasibility would hurt.
Edit: I read the description a little late. Not sure how many tour guests you had but 15 min notice is absurd; you fucking killed it and probably made more than a few of these boards. I’ve worked in retirement/independent living homes and the kitchen work there is more intense than anyone would imagine

It’s a nice offering for a tour or guests. It’s more of a mixed plate, not so much charcuterie. Is that hummus or mustard in the middle? Charcuterie I’d expect 2-3 meats, appropriate accompaniments like pickles, mustards, olives, olive oil and toasted bread. It’s more of a crudite platter with a meat and cheese section – but I’d honestly call it a party plate. Semantics aside it looks great and it’s a perfect offering for a tour, with a bit of everything and not just all heavy meats and cheeses. Nice work! Change the verbiage lol don’t change the actual offering, it’s perfect.

I’d eat the shit out of those Bologna roses. I can imagine each layer leaving its own streak of fat on my teeth and having to use my tongue to scrub it off.

I like it. I toured nursing homes not too long ago for my mother in law and this would have impressed me.
Maybe consider adding some sort of pickled veg for an acidic component that will help balance out the fat in the cheese and bologna? Overall though I think you did a really nice job, especially given the 15 mins notice and PRD constraints.

The only change I’d make would be switching the triangle lemon slices out for oranges. Purely for eatability and discounting the people who might want to squeeze the lemons onto the cucumber or the meat.
