Mutabbal is a homemade appetizer made from baked eggplants. I cook it the Jordanian way. There are many recipes for making mutabal, they may differ slightly in composition, depending on the region and the taste preferences of local residents. I offer you a very simple and homemade way to prepare this appetizer. This traditional Middle Eastern dish is easy and quick to prepare.

Ingredients.
Eggplants – 600 g.
Garlic – 4 cloves.
Half a lemon.
Sesame paste – 3 tbsp.
Water – 100 ml.
Parsley, mint.
Tomato.
Olive oil.
Salt to taste.
In my opinion, this is the most delicious and simple mutabal recipe, I highly recommend making it.

Mutabbal Wash the eggplants and put them in the oven, do not cut or pierce them before baking. Bake the eggplants for 15-20 minutes in an oven preheated to 200 °. Separate the pulp from the skin while the eggplants are still hot. Chop the garlic and add to the eggplants, salt, mix thoroughly, salt and garlic should be added when the eggplants are still hot. Sesame paste – 3 tbsp. Lemon – half. Water – 100 ml. Mix well. Parsley, mint. I left the list of ingredients under the video. Enjoy your meal.
