6-8 bone-in chicken thighs
16oz frozen spinach, thawed
1 cup crumbled feta

Squeeze all the liquid out of the spinach. Add feta and mix. Season the chicken thighs all over with salt and pepper. Tack a couple of tablespoons of the spinach feta mixture and place it between the chicken skin of each thigh. Slightly press it down to spread it evenly. Place it in a preheated 375 oven, on a grill, or what I like is on my @traegergrills at 375 for 45min-1 hour or until the internal temperature hits 160.

crispy skin feta and spinach stuffed chicken thighs. It really only takes three ingredients. You have to make this tonight for dinner. If you’re looking for an easy meal with a short list of ingredients that’s healthy, delicious, and super simple to make, well, you found it. Grab some frozen spinach, thaw it out, and squeeze out the excess water. Then, throw it into a bowl with about a cup of feta cheese crumbled and mix it up. Grab yourself some chicken thighs. Season both sides with salt and pepper. Then, using your finger, spread apart the skin from the meat. Then take a couple tablespoons of the mixture and stuff it underneath the skin. Press it down gently and repeat with the rest. Now you can pop these in a 375 oven or on the grill, but I’m going to put them in my Traeger. Add a little bit of that smoke. Pop them onto my Traeger at 375. And after about 45 minutes or so, when the skin is nice and crispy, they’re done. A simple, easy threeingredient meal that anyone can make.
