Decided to try my hand at plate ribs for the first time on the Big Joe 1. It was about 6.75 lbs and I threw it on 7am, running at 250 for about 2 hours, and then felt like going to 275 for the next 5ish hours, all unwrapped. Also put them on as grill was coming up to temp once the big chunk of wood I had on top caught fire (the rest were buried).

First photo is right after coming off, before wrapping and hot holding for a few hours before dinner. Second photo is right before enjoying. Despite needing a sharper knife, they were everything I wanted them to be. Delicious.
