Today I’m making this Italian sausage tortillini soup. It’s made with a savory tomato base loaded with cheese tortillini, Italian sausage, and baby spinach. It is absolutely one of my favorite fall soup recipes. I season it with thyme, oregano, basil, salt, and pepper. Add in vegetable broth and baby spinach. Then goes in the cheese tortillini. This only needs 30 minutes to cook. And with about 15 minutes of prep time, your soup is done in less than an hour.
