  1. Caprese with Roasted Cherry Tomatoes

    Ingredients:
    • 300 g cherry tomatoes
    • 250 g mozzarella
    • 4 cloves garlic, peeled
    • Salt (to taste)
    • Black pepper (a pinch)
    • Chili powder (a pinch)
    • 2–3 spring onions chopped or dried
    • Olive oil (a good amount )
    • Fresh basil, chopped (to taste)

    Instructions:
    1. Roast the tomatoes
    • Preheat oven to 250 °C.
    • In an oven tray, combine cherry tomatoes, garlic cloves, salt, olive oil, spring onion, black pepper, and chili powder.
    • Mix well to coat everything evenly.
    • Bake for 20 minutes until the tomatoes are softened and slightly caramelized.
    2. Prepare the mozzarella
    • While the tomatoes are roasting, chop the mozzarella into small pieces.
    • Place in a large strainer to drain excess water.
    3. Prep the basil
    • Chop the fresh basil leaves and set aside.
    4. Assemble the salad
    • Remove roasted tomatoes from the oven and transfer them to a plate to cool.
    • Drain any remaining water from the mozzarella.
    • In a serving bowl, combine roasted tomatoes, mozzarella, and basil.
    • Gently mix to combine.
    5. Serve
    • Enjoy at room temperature.
