Malzemeler:
1 buçuk kilo dana işkembe (küçük baş da olur)
2 yemek kaşığı un
4 yemek kaşığı yoğurt
1 limon
1 yumurta
2 sarmısak
Tuz

Tarifi:
İşkembeleri bol suda ovalaya ovalaya yıkayın.
Mümkünse sirkeli suda 1 saat bekletin.

İşkembeleri düdüklü tencerede 20-30 dakika haşlayın.

Terbiyesi için;
Unu, yoğurdu, limon suyunu, 1 tatlı kaşığı tuzu, yumurtayı, 2 sarımsağı 2 su bardağı suyu karıştırın.

Haşlanmış işkembeleri tekrar temizleyin ve dilediğiniz gibi doğrayın.

İşkembeleri 2 su bardagi kaynar suya ekleyin.
Terbiye suyunu da alıştırarak ekleyin.

Biraz kaynadıktan sonra, altı kısık şekilde 20 dakika pişirmeye bırakın.

Sarımsaklı su, az sirke ve biberli yanık tereyağı ile servis edin.

Hello, welcome to my channel. Today we are making tripe soup with you. The most important part of this soup is the cleaning stage. No matter how well you clean it and how clear a tripe you get, the result will be magnificent. Please do not skip this part, I started cleaning the tripes under running water . After washing thoroughly, I continue washing more with the addition of a little salt and a little vinegar. Then I have to leave it like this for at least an hour. After waiting, I wash it again in running water and rinse thoroughly . If you have a pressure cooker at home, it will be easier to make this soup in the pressure cooker . I will show it this way in this video, but you can also make it in a pot if you wish. Cooking times will vary. In the following sections of the video, I will explain these times in detail. I put the washed tripes into my pressure cooker. I add water to cover them by 2-3 fingers. I add a very little vinegar. I add salt and a little grated lemon peel to add flavor. I opened the bottom of the pot thoroughly. After it boils, I cover it tightly. I leave it to cook. While the tripes were boiling in the pressure cooker, I started to season them. I use 2 tablespoons of flour, one egg, and 4 tablespoons of strained yoghurt. To add flavor to the marinade, I crush two small garlic cloves in a garlic press and add them to this mixture. I also add salt, then squeeze the juice of one lemon. Now our finishing mixture is ready, now it’s time to beat it well. First, I whisk it well, without adding any water, until it reaches the consistency of pancake dough. After reaching the consistency I want, I continue to mix 2 cups of water slowly and thoroughly. I preferred to make the tripe soup in a decent way. If you wish, you can also do it with clear water. But I find this version of this soup to be more nutritious, more aromatic, and lighter, without having a heavy smell. The soup is ready to be seasoned. If you have a new model pressure cooker, 20-25 minutes will be enough. If it is an old type pressure cooker, I recommend cooking it for at least 40 minutes. If you are just making it in the pot, it can be over 1.5 hours. You need to check it, if it softens, you can buy it. As you can see, my tripes have become very soft. I was able to get clear water. Now I’m moving on to the stage of cutting the tripes. I will extract it from the dice you see. I start my process by sorting and cleaning the areas that I don’t like and the areas that I see as dirty . The tripes coming out of the pot come in two different ways. You will see that the veins and joints are a little harder, while other parts are a little more leaf-like. I’ve finished the cleaning process, now I’m going to move on to the cutting process. I’m chopping the hard parts, which I call grainy, a little larger . I try to chop the other parts, the leaf parts, a little larger. Tripe soup is actually a local dish. It can be made differently in each region. While it can be made with clear water, it can also be made with seasoned water, or it can be chopped larger or smaller. In some cooking methods, the water in which the tripe was boiled is not discarded. Directly that water can also be used, but since I don’t want that heavy water , I threw away the water and will boil it again in clear water. The tripe is chopped, the marinade broth is ready, now it’s time to make it into a soup. I add the tripe I cut into 2 cups of boiling water. As you can see, I did not use the used, boiled water because I wanted this clear water. After boiling the tripes for a while, it is time to add the marinade water. There is something you should pay attention to when adding finishing water. To prevent curing from curdling, we warm the curing water. I continue stirring until it boils. After cooking on low heat for 10-15 minutes, our soup will be ready to serve. When serving tripe soup, make sure to keep garlic water and vinegar water on the table. Our soup is ready now.
