Used the king Arthur recipe but did a 4% lye bath. Came out crunchy, chewy, and soft at the same time. Learned to oil the parchment, or at least drain them on a rack prior to parchment as the lye water made them want to marry the paper forever.

  3. I used the silicone baking mats when I make pretzels. No worry of sticking. I had to do surgery one time to get the pretzels off of the parchment paper.

  4. Stupid question please, how do you go 4% lye bath? Like 4ml lye that you get from shops + 95 ml water?
