Today, weβre making Sicilian swordfish rolls on skewers β a light, flavorful seafood recipe perfect for a summer dinner. First, soak the raisins in warm water for about 10 minutes to soften them and enhance their sweetness. While they soak, finely chop the garlic so the flavor spreads evenly through the filling. In a mixing bowl, combine breadcrumbs, chopped garlic, anchovy, and fresh oregano. Add orange juice, lemon zest, olive oil, and grated caciocavallo cheese. Drain the raisins well and add them to the mixture with a pinch of black pepper. Drizzle more olive oil and mix until moist and compact. Lay out the swordfish slices and season with a little salt. Place one tablespoon of filling in the center and roll them up tightly. To prepare the skewers, alternate half an orange slice, a bay leaf, and a swordfish roll. Repeat until the skewer is full. Heat olive oil in a pan over medium-high heat. Cook the skewers for 2β3 minutes on each side until golden and cooked through. Serve your Sicilian swordfish rolls on skewers warm, and enjoy a taste of Sicily at home!
