    Are you making a new menu? Bringing in some cooks you know? What kind of people do the owners seem to be?

    The only kitchen I was ever head of was small, but still. When you get that title and you can say “*my* kitchen”, it feels great.

    Fire the biggest asshole in the kitchen. Don’t stick anything in anyone for 6 months. Get some good shoes.
