
I dont like leafy salads, so here's a dense one!
It has:
Tofu
Black eyed peas
Cucumbers
Tomatoes
Bell peppers
Chopped prunes
Avocado
For marinade:
Pickle juice, lemon juice, and salt and pepper to taste.
Was so good but so much I couldnt finish it!

I read this as Cod Salad for a moment 😭
Sounds delicious and never thought of using pickle juice as a dressing and prunes as an ingredient.
Every single “salad” I eat is basically a bowl, with lots of veggies, legumes or tofu, and some kind of grain or quinoa, nuts/seeds, topped with salsa, avocado, etc., pretty much just like yours (I do like all of that on top of a bed of chopped greens, though, when I have them).
My modification: adding either barley or farro. I love hearty, toothsome grains!
