I've cooked briskets before but I'm far from an expert. Bought this brisket from an online butchers. Is this right? Looks nothing like I've bought before. This is a 2kg piece so not a full one.

    That is definitely *part* of a brisket, but it’s not a cut that I personally would ever have chosen if given the ability to pick and choose.

    It looks like they give the small orders the least desirable cuts, rather than scrapping it or turning it into sausage. Or maybe I’m wrong and this is a fluke. Either way, I wouldn’t order from them again.

    I would also reach out to them see if they’ll make it right – either with a refund or reship.

    Looks like it’s a chunk from the point. If I were you, Id just smoke it till tender and then chop it up. Make sandwiches or tacos out of it. Probably your best bet to make the most of the cut you received.

    Trim as much fat without cutting any meat and smoke it up. You could liquify the fat into talo and use it for frying LOL.

    Has kind of a tritip shape to it but hard to tell from only one side. It’s butchered like how I cut up a deer in the field. Poorly.

    Judging by your plug sockets, you’re British.

    We struggle to get good brisket over here. Our beef is grass fed for one thing. The butcher I use I usually order in advance and usually at least 4-5kg (10-11lbs) so I get a good chunk. Find yourself a good local butcher rather than buy online so you can go in and see what you’re getting.

    The plug sockets and hovis bread tells me UK. The only online butcher I know of is The Fat Butcher – was this them? My mum has been trying to get me on them for a while.

    Fellow Brit- honestly nowadays I don’t even bother with British brisket, grass fed and too young to get the same level of marbling etc. One exception is Warrendale wagyu, which is ok but a bit dear.
    I tend to buy from John Davidson’s, which is a Scottish butcher that ships (frozen) nationwide; they have a cracking selection- I think their grain fed Australian stuff hits the right balance of price and quality, just got a 6kg full for a little over £100. Otherwise the wagyu crosses are decent, or you can buy USDA prime on there, but be careful, only smoke the flat! A USDA prime point, while delicious, is far too rich for our weak English digestion and unless you’re used to that level of fat, you’ll be shitting your guts out for hours.

    Otherwise I have a friend who swears by sous vide and injection and all sorts of other bollocks, but I’m too lazy for that.
