Standish and Wellfleet. Tarragon, will, butter, parm, a touch of old bay, and chives at the end.
Slightly overcooked. When they start to cook, they do so quickly.
Fun to try…. but I prefer raw.

We’re doing this tonight! I’m excited. I too prefer raw, but it’s fun to mix it up sometimes!! We’re just planning some butter, garlic and lemon. Maybe a squirt of hot sauce.

I moved to NC last year and it’s awesome because the farmed oysters are incredible for raw (grew up in New England and thought cold water was the only way; it’s not haha) and then we get super cheap wild oysters for grilling October-March.
