This fruit and nut chocolate cake that I made has one special ingredient. It’s super fudgy, absolutely delicious, filled with fruit, nut, and of course, my secret ingredient, red wine. I don’t know about you, but I definitely prefer to eat my red wine versus drink it. I decided to use the Little Ripples Zero Sugar Shiraz red wine. It’s got a beautiful fruiness to it that really compliments the dried fruit and the nuts that I’m using. My favorite chocolate is fruit and nut chocolate. So, I thought, why not make a beautiful cake that represents this beautiful chocolate bar and also adding in that red wine. Think about it like a cheeseboard after dinner, minus the cheese. And of course, we’re adding in the dark chocolate. And what goes better with a cheeseboard? Fruits, nuts, chocolate, and wine. A handy tip there is to bloom your cocoa powder. Added a little bit of red wine that was warmed up to the cocoa. And that just enhances that chocolate flavor. I’ve used an assortment of dried fruits. I’ve got some dates. I’ve got sultanas. I’ve got those beautiful cranberries. And I’ve used some pistachios, some almond. If you caught that before, I did add a few spices like some nutmeg and cinnamon. I would have liked some orange zest to go with the red wine. To frost this beautiful cake, I’m making a dark chocolate ganache, of course. And I’m going to add a cheeky bit of red wine into the cream mixture and then pour that over my chocolate. And you’ve got a beautiful ganache. This fruit and nut cake deserved a moment in the sun. So, we’re going to decorate it beautifully. I’ve got two very thick, fudgy layers of that chocolate mud cake, a thick lashing of the dark chocolate red wine ganache, and we’re thinking rustic. So, just bear with me. It wouldn’t be a fruit cake without fruit. So, of course, I’m going to adorn it with beautiful grapes, raspberries, and a whole bunch of dried fruit and nuts that I’ve used that are inside the cake. Star of the show is the red wine. So, of course, we had to do a red wine poached pear. And there you have my beautiful fruits of the forest chocolate mud cake with fruits and nuts and red wine from Little Ripples because if you’re drinking wine, why not help someone in the process?
