Just wondering how many of y'all use cast iron. I made some wonderful seared vegetables into a soup with lentils in my insta pot. Spent $40 at the local grocery store and have enough food in the fridge and freezer for the week for me and my wife.

Cooked separately because she has a gluten ontolerance I made some noodles for myself

Also, I only spent $10 on the cast iron, check your local online yard sales to save tons on things you need.

This looks good! Also, I’ve really been wanting a cast iron pan.

Be open minded. I never had lentils before. Started having gut issues and noticed I felt better when I ate Indian food so I wanted to see what was making me feel better. It was the lentils, they are a lovely thing to make things stretch. You can even put it in hamburger meat to stretch that out.

I looked for unpackaged veggies I could cook slow and low. After time in my cast iron I sent it to my crockpot express, an off brand instant-pot I got from my mom, with a broth I made from leftover turkey bones/vegetable scraps from last week(buying meat unprocessed is cheaper i.e. a whole chicken instead of just the breasts).

Heated it up just now after work with some ramen. Man it was wonderful. Get creative, you don’t have to eat the same thing over and over. This was fast and simple, but you could put it on the stove, lentils cook fast. I <3 lentils

    Edit: it’s late, punctuation.

Nice! I’ve found I like split peas with a little oil, other veggies and throw in a little protein. Very filling!

    That looks amazing, well done!

I always say I could be a vegetarian bc I love vegetables so much…. but I also love burgers and bacon and steak and Chick-fil-A lol.

Those veggies really do look absolutely delightful, I bet they tasted great!!!

It will never not be true that the mass majority of meals everyone enjoys are “poor” people food across all nations. I put that in quotations because it’s not true regarding a negative perspective of how people prepare meals. Sustenance for labor, to be stretched out, and to be followed through by other means later on. Been the same story for centuries. The reason why is, if done right, it’s nutrient dense. You found a means to keep another day ahead.

Next time be sure to soak your lentils it can help lessen digestive gut issues and it also cuts down on cook time/improves nutrient absorption and reduces phytic acid.

I always soak mine over night starting with hot boiling water and put it in aluminum bowl with a cover. There are many different ways to soak lentils too. You just have to find the best one for your dish you want to use them in ☺️

Lentils carrots and celery, cooked with stock and a bit of wine, dried herbs are amazing. I cook a large batch and put loads in the freezer so I have a side dish that fills me up.
