Stuffed Artichokes Recipe 🌿A delicious side dish for two, easy to prep and full of flavor!
Ingredients (for 2 artichokes):
• 2 artichokes
• 15g (1 tbsp) butter, softened + extra for drizzling
• 10g (1 tbsp) parmesan, grated
• 50g (3.5 tbsp or ¼ cup) ricotta
• ½ tsp dried thyme
• Salt & pepper to taste
• ½ lemon
Instructions:
1) Prep artichokes: Trim stems, cut 2.5cm (1 inch) off tops, snip thorny tips with scissors. Rub with lemon to prevent browning.
2) Boil: Submerge in boiling water, cook 35-45 min. Cool slightly, dry with paper towels.
3) Clean: Gently open center leaves, scoop out fuzzy choke with a spoon.
4) Stuff: Mix butter, parmesan, ricotta, thyme, salt, and pepper. Spoon filling into the center of each artichoke.
5) Bake: Place on a baking sheet, drizzle with melted butter, broil 5 min until golden.
