Shore vacationers and Asbury Park residents alike have a fresh new reason to visit Capitoline. The Italian restaurant and craft cocktail bar is enhancing the experience with a creative new cocktail menu featuring inspired flavors; many of which pair perfectly with one of their signature pizzas or Italian entrees.

Of course, the bar staff can already craft any classic cocktail patrons might be thirsty for. But their popular rotating craft cocktail menu is now something returning fans look forward to with each visit. During the summer, the menu takes advantage of sweeter and fruitier flavors. But there are also some innovative new options with flavor profiles that will be new to many patrons.

Creative Craft Cocktails

Notable new offerings include the “Negroni Spuma” with watermelon gin, clementine liqueur, Campari, sweet vermouth, lime, and olive oil; as well as the “Overnight Celebrity” with mezcal, Aperol, strega, and lime. Then there’s the Capitoline house favorite, “Kiss with a Fist,” featuring habanero-infused blanco tequila, bell pepper, and strawberry shrub.

However, Owner/Director of Operations Charlie Interrante says “A Certain Shade of Green” is his go-to. This velvety matcha cocktail holds a “surprising but undeniable touch of sesame. She’s a beautiful dark green in color, and the perfect example of the thoughtful nature we’re so lucky to have behind Capitoline bar,” Charlie says.

Inspired Italian Cuisine

To pair with their cocktails, Capitoline serves a menu of “craft casual Italian” and pizza which focuses on approachable dishes. Their slightly re-imagined takes on classic dishes include a massive bone-in veal chop. Their version comes with a choice of pasta, fresh mozzarella, basil, Parmesan cheese, and either marinara or vodka sauce. Likewise, their Hanger steak comes with Parmesan fries, herb butter, and balsamic aioli. Charlie also recommends the bucatini and clams as well as the porchetta plate.

Meanwhile, their pizza menu features options like Zingara, which is a favorite of Charlie’s. This pie is made with vodka sauce, sweet sausage, green olives, cherry peppers, basil, fennel pollen, and Parmesan cheese. Another popular pick is the Shrimp Scampi pizza made with white wine, cream, lemon parsley, and Parmesan cheese.

About the Restaurant

Capitoline boasts an industrial chic vibe. The restaurant can seat 150 indoors, with 28 semi-outdoor seats near their large hanger front windows. The building originally served as a department store in the 1940s and 1950s, but became Capitoline in March 2016.

The restaurant’s name references the Capitoline Wolf; the maternal wolf that nurtured the founders of Rome (Romulus and Remus). “It worked well with our Italian food theme,” Charlie explains.
