This is one of those dishes that work anytime on its own with bread or next to whatever protein you’ve got going. It’s simple, satisfying, and made with ingredients we almost always have on hand. Flat beans or string beans, whatever is in your fridge. Get your prep done first. Dice the onion. Trim and chop the beans. Crush the garlic. I always use my mortar and pestle. It’s the only way I like to do it. And once you’ve cut your beans to rinse them, you want them wet before they hit the pan. Now, saute the onion and garlic in plenty of olive oil. And when they soften, add the beans and season. Salt, white pepper, and a touch of black pepper. Cover and let it cook gently for about 20 minutes. And once they’re soft, add in a can of diced tomatoes. Stir through and lid back on. Another 15 minutes, and you’re done. It keeps well, tastes even better the next day.
