Mackerel filets with ginger and chili by Angelo Parodi

A delicious homemade butter masala is a favorite of mine, but you can always use a jarred sauce too, no shame there.
The complex flavors of a freshly made garam masala blend are irreplaceable.
The soft and fluffy naan was the perfect vessel to contain all these flavors.
The cooling basil lime yogurt helped compliment the rich butter masala. The cilitrano and green onion brought some much needed freshness.
Pickled red onion completely leveled this whole thing up.
This recipe was a winner for sure!

  7. Tinned mackerel curry and roti (or parathas) is one of my all time childhood favorites. Growing up in Fiji this was one of the street foods you could pick up for cheap, so good !
