it’s almost that time of year where zucchini grows in abundance we used to have a neighbor who grew them and would gift us so many every summer so I started thinking of different ways to use zucchini in my recipes and this creamy zucchini pasta has easily become one of my most popular recipes it’s quick easy and budget friendly yet it’s packed with so much flavor it’s almost hard to believe how easy it is to prepare once you’ve sauteed your zucchini and aromatics throw them into a blender with the rest of the ingredients then pulse until smooth and taste and adjust seasonings if necessary toss with your favorite pasta and that’s basically it this is great on its own or add any protein that you’d like and garnish with lemony garlic breadrumbs if you know you know you have to give it a try the full recipe will be linked in the comments below

We used to make many loaves of zucchini bread with shredded zucchini, shredded carrots and a lot of cinnamon! We told the kids it was called something else so they’d eat it! We’d freeze some for later and it just tasted like cinnamon so it was great with butter or cream cheese on top! Yum! ❤
We live to simply summer them in chicken broth till tender and OMWorrrrd… sooo good. We can eat a whole one each…
