Made chicken thighs for my crew today. Turned out good but need to learn how to make crispy skin. Very juicy though. Used a different seasoning for each row.

Top: Homemade rub
Second: Bad Ass Shit (Favorite, lots of pepper)
Third: Hallelujah Jalapeño and Sweet Preacher
Forth: Special Shit

    If you want crispy skin, get a vortex, and don’t worry about smoking.

    To crisp up the skin, you need to put them in a hotter grill/oven after the smoking is done.

    When i do chicken, I crank the heat to 425-450 for the last 20ish minutes and that just about gets it there

    Easiest way to get crispy skin is high temps over 350°. That’ll crisp up most skin on chicken. You could also dry brine the chicken by salting the skin and letting it sit in the fridge for 24 hours. And air chilled thighs seem to get a crispy skin easier than the average brined chicken you find at walmart or something.
