Recipe
Soak 3 cups of white bean overnight, 12hrs at least, rinse well and strain.
Fry carrots, celery, onions, garlic with a little olive oil on medium to low heat for 12mins.
Add bayleaves, one and a half tablespoons tomato paste, cook for 30seconds then add beans, vegetable stock (or just water if you dont have stock) add salt, pepper, paprika, oregano, any variety of apple to bring the sweetness into this gorgeous dish.
Cook for one hour and a half, once cooked discard bayleaves and apple, add freshly chopped parsley and olive oil (chilli flakes optional)
Serve with bread, vegan feta and olives. #yum
