🍰 Ingredients:

Pineapple Fresh 1 OR
Canned/ tinned sliced Pineapple 1

Cocoa powder 3 tablespoons
Warm Water 80ml (β…“ cup)

Plain Flour 175g (1 cup, 3 tablespoons)
Baking powder 1 teaspoon
Baking soda β…“ teaspoon
Sugar 150g (ΒΎ cup)
Butter softened 150g (β…” cup)
3 Eggs

Chocolate Pineapple ganache:

Milk Chocolate 150g
Heavy cream 80ml (1/3 cup)
Pineapple puree 60ml (ΒΌ cup)

Sugar syrup (optional):
-Just mix –
Sugar 50g (ΒΌ cup)
Warm water 80ml (β…“ cup)

Measuring cup size – 240 ml
Baking pan 20×20 cm (8×8 inch)

Method:

Mix Cocoa powder and the warm water.
Set aside.

Add Flour, Baking powder, Baking soda, and sugar into a bowl.
Mix well.
Add the Eggs and Butter.
Now whisk at low speed for 30 seconds.
Mix with a spoon.
Add the Cocoa mix.
Whisk again for about 30 seconds.
Give it a final mix.

Place the Pineapple halves on the bottom of the baking pan.
Pour the batter over them.

Now Bake in a preheated oven at 175c (350f) for about 30-35 minutes.

Let it cool down completely.

For the Chocolate ganache:

Microwave the Chocolate and the cream for about 1 minute.
Mix well.
Add the Pineapple puree (or finely crushed pineapples)
Mix well.
Chill for about 10 minutes.
Whisk for 1-2 minutes
It is ready.

Cling film the same pan.

Now,
Cut the cake in half.
Drizzle the syrup from the pineapple tin/can on both halves.
Now place the top half, on the bottom of the pan with cling film.
Spread the ganache.
Cover it with the other cake half.
Now the pineapple slices should be visible on the top.
Chill the cake for about 15 minutes.
