Took a shortcut and put pork shoulder in the instapot with just a bottle of Mojo Marinade. Perhaps not the most authentic recipe but it was easy, fast, and the results were superb.
With the time saved I made my own tortillas and pickled some onions with ghost peppers. Other toppings include refried beans, salsa verde, limes, and hot peppers grown in the garden.
The hot sauce should be authentic, as it is a bottle I picked up during my last trip to Mexico. Not too spicy and complimented the orange heavy flavors of the carnitas.
