    Pork is the true MVP of grilling/smoking/cooking. It’s taste-to-cost ratio is far higher than beef or chicken imo.

    You could not have said that better. Pork steaks are hard to mess up all they need is heat and time to turn out great. Seasoning is optional IMO.

    Would agree with you on that cut of meat as it’s the best result I can get for when I’m doing, barbecuing or smoking or even on the grill as usually always very tender.

  11. 100% if you treat them like ribs (think st louis) they are just like them but no bones! haha really good and can find cheap.

    I always have to try to share St. Louis Pork Steak recipe. It’s like in this photo, bone in slice of pork butt. First you season it and put some color on it with grill. You are not fully cooking it, maybe 3 minutes on a side. You put it in a pan with bbq sauce and beer (as another user /u/Wilson2424 noted Mauls bbq and busch beer are the tradition) You put that pan back on the grill to braise for a good hour. Drink more beers. You take them out of the now-reduced sauce glaze and give them a final sear to caramelize the glaze.

    St. Louis has made many contributions to the national cuisine: toasted rav, the ice cream cone, but this may be the finest.
