Salmon: brush with EVOO, salt & pepper, roast at 400° F for about 13 minutes.
Feta: put brined feta in baking dish, top with 2T EVOO and a drizzle of honey, sprinkle on thyme. Surround with three heads of garlic (individual cloves) and about a cup of cherry tomatoes. Bake at 400° F for 20 minutes, then add halved kalamata olives. Bake 8-10 more minutes. Serves 4.
