    Moved from west Texas to Houston, I miss the smell of roasted hatch chiles. We have them here, but back home all the grocery stores would roast them in big batches in front of the store.

    I’m from San Diego but spent 1.5 years in New Mexico for a job out there. I remember the love for Hatch Green Chiles. You could purchase the fresh chiles on the side of the road and they would roast them for you in those big baskets. Wish I had some right now. Great memories just from the food. Looks good OP!

    Grilling some for chicken elote bowls right now. As a born and raised Coloradan, I got weak in the knees seeing them by the bag at Whole Foods in the Bay Area.

    I always look forward to hatch chile season, my local grocery does roasting events in the parking lot every year and the smell is heaven.

    I buy half a dozen jars of roasted hatch green chilis when Costco has them… just had them on the side for dinner with sliced avocado and grilled chicken thighs. 😀
