Just got back from a vacation to a southern state coast where my eating wasn’t too awful, but definitely heavier than normal so I wanted something fresh and delicious to reset my and my spouse’s stomachs.

Salmon marinated with evoo, brown sugar, soy sauce, and garlic then broiled @ 500 degrees for 8 minutes. Couscous salad has tomatoes and cucumber from my garden, Kalamata olives, chickpeas, artichoke hearts, feta, and mint with a homemade vinaigrette. Made a ton to eat throughout the week, I only managed to eat half of my salmon portion so the other half will be eaten cold with more of the salad tonight!

    Can’t edit text, but measurements were mostly eyeballed. 1 box of Trader Joe’s pearled couscous toasted with garlic infused olive oil then cooked according to package directions. 1 medium cucumber, deseeded and chopped. About 20 cherry tomatoes halved, 1 jar of artichoke hearts chopped, half a jar of Kalamata olives halved, 1 can of chickpeas rinsed, and about half a container of feta. All but the first 2 from Aldi to get an idea of container sizes. Vinaigrette was olive and avocado oil, lemon juice, red wine vinegar, salt, and pepper measured with the heart into a small container, shaken, and then stirred in. Let the salad chill in the fridge for a couple of hours.

    Salmon marinade was 1 tbsp each brown sugar, soy sauce, and olive oil plus garlic powder, salmon was descaled and placed skin side up in a container for 1 hour then broiled according to instructions above.

    Looks great. You only ate half?! Both of those plates together would be my serving size! Lol

    Edit: I’m always so jealous when I see the large couscous. I’ve never found it in the wild and I’ve only had it in a restaurant once but I loved it.

  3. It looks good, but keep in mind that couscous is made with white flour. So, it might be fine to have once in awhile, but it isn’t an “eat every day” item.
